Pastry Sous Chef
Located in the heart of NoHo, Il Buco Alimentari & Vineria is an Italian-inspired restaurant, market, and bakery rooted in seasonality, artisanal craftsmanship, and ingredient-driven cooking. Part of the il Buco Family, Alimentari brings together house-made breads and pastries, traditional techniques, and warm hospitality in a vibrant all-day dining environment.
Job DescriptionThe Pastry Sous Chef supports the daily pastry and bakery operations at Il Buco Alimentari & Vineria, working closely with the Executive Pastry Chef to uphold the quality, consistency, and standards of the il Buco brand.
This role is primarily focused on supporting production, organization, and execution within the Alimentari pastry program, with an emphasis on consistency in recipes, viennoiserie, systems, costing, and overall product quality. The position is highly hands-on and requires a strong attention to detail, organization, and teamwork in a fast-paced kitchen environment.
While the primary focus is NYC operations, the role requires some flexibility to support other il Buco locations, including occasional support for commissary and seasonal operations in the Hamptons as needed.

The Pastry Junior Sous Chef is a full-time, hourly position that reports directly to the Executive Pastry Chef.
Key Responsibilities
- Support daily pastry and bakery production at Il Buco Alimentari & Vineria
- Assist in maintaining consistency in recipes, techniques, quality standards, and presentation
- Help oversee viennoiserie, bread, pastry, and dessert production as needed
- Support training and development of pastry and bakery team members
- Assist with recipe testing, documentation, costing, and production systems
- Help manage ordering, inventory, prep levels, and waste control
- Ensure cleanliness, organization, and food safety standards are maintained at all times
- Collaborate closely with culinary leadership on menu development and operational improvements
- Provide operational support across other il Buco locations as needed
Required Qualifications
- Minimum 3 years of pasty experience in a high volume, upscale to fine dining restaurant
- Valid Food Handler’s Certification
- Team-focused mindset and empathetic approach to collaboration
- Effective style of management, promoting a team atmosphere
- A positive and enthusiastic attitude, as well as a desire to learn, grow, and develop
- Excellent communication, organizational, and interpersonal skills
- Ability to remain calm under pressure
- Willing to accept guidance in a positive manner and implement the direction in a way that is productive for both you and the team
- Ability to demonstrate quick thinking and adaptability in a constantly changing environment
- Flexible Schedule: Early AM, PM, Weekends, Holidays and as needed due to company events
Physical Demands
- Ability to lift up to 25 lbs frequently and up to 50 lbs occasionally.
- Standing for 4 to 8 hours per shift with occasional bending and reaching.
- Ability to work in a bakery environment with varying temperatures.
