Lead Pastry Cook

Nami Nori is looking for a Commissary Pastry Lead to support daily pastry production for Nami Nori and TBD. This is a hands-on role for someone with strong pastry fundamentals, good organization, and the ability to help guide a small team.

The Commissary Pastry Lead will help open and close the commissary kitchen, maintain quality and consistency, support training, assist with inventory and ordering, and communicate closely with the Head Commissary Chef and Chef Partners.

• Lead daily pastry prep and production for Nami Nori and TBD.
• Support opening and closing of the commissary kitchen according to company standards.
• Execute pastry techniques including scaling, mixing, proofing, baking, decorating, and finishing.
• Check pastry items for quality, consistency, portioning, and presentation.
• Guide and support a small pastry prep team during the shift.
• Train team members on recipes, techniques, organization, sanitation, and quality standards.
• Monitor pars, inventory, ordering needs, and product shortages in partnership with the Head Commissary Chef.
• Maintain a clean, organized, and safe work environment in accordance with DOH, OSHA, and company standards.
• Follow proper food storage, labeling, rotation, and FIFO procedures.
• Communicate production updates, quality concerns, equipment issues, and shift needs clearly and promptly.

Qualifications and Requirements

• Strong pastry fundamentals and attention to detail.
• Ability to lead by example and communicate clearly with a small team.
• Organized, reliable, and able to work with urgency in a fast-paced production environment.
• Ability to follow written and verbal direction.
• Basic math skills required.
• Ability to work independently and as part of a team.
• Ability to lift at least 30 pounds regularly.
• Ability to stand, bend, stoop, and work on feet for 6 to 10 hours.
• Must follow posted schedule, clock in and out properly, attend required meetings, and follow all company policies.
• Must maintain professional conduct, grooming, and presentation standards.
