Baker

Il Buco Commissary , the East Hampton bakery and newest member of the Il Buco Family, is growing our team. Rooted in the tradition of the beloved Il Buco Restaurant, our bakery focuses on artisanal techniques and high- quality ingredients. We are seeking a passionate and skilled Baker who enjoys crafting rustic breads, laminated pastries, and baked goods while maintaining the highest standards of quality and consistency.

• Prepare and bake a variety of breads, pastries, cakes, and baked goods

• Mix dough, manage fermentation, scale and shape products, and oversee baking processes

• Demonstrate a strong understanding of rustic breads, laminated doughs, croissants, rye breads, and fermentation techniques

• Serve as a resource for the bakery team regarding recipes, product quality, and baking techniques

• Maintain high standards for food quality, consistency, and presentation

• Ensure the facility operates in compliance with NYC Department of Health regulations

• Maintain a clean, safe, and organized kitchen environment

• Operate and maintain baking equipment including ovens, mixers, and proofers

• Maintain and update recipe books and assist with tracking food waste

• Collaborate with the Head Baker and team members to ensure efficient production and timely delivery

• Support other departments when needed and contribute to a positive team culture

• Minimum 3 years of baking experience in a high-volume, upscale, or fine dining environment
• Strong knowledge of bread production, fermentation, and laminated dough techniques
• Valid NYC Department of Health Food Handler Certification preferred
• Experience operating and maintaining professional baking equipment
• Strong communication, organization, and teamwork skills
• Positive attitude with a desire to learn, grow, and develop professionally
• Ability to remain calm and adaptable in a fast-paced environment
• Willingness to accept guidance and contribute to a collaborative kitchen culture
• Flexible Schedule: Early AM, weekends and Holidays 

• Ability to lift up to 25 lbs frequently and 50 lbs occasionally
• Standing for 4 to 8 hours per shift with occasional bending and reaching.
• Ability to work in a bakery environment with varying temperatures.
