Pasta Maker

Castell’s is seeking an experienced Pasta and Dough Maker to take on our pasta, pizza, and bread program.

We are looking for someone who understands that exceptional dough requires precision. Hydration, fermentation, texture, thickness, shaping, proofing, portioning, and consistency must be carefully controlled every day. We want someone who respects traditional Italian techniques while also being excited to create distinctive and interesting pastas, breads, and pizza doughs.

Responsibilities

• Prepare fresh pasta doughs from scratch
• Roll, laminate, extrude, cut, fill, and hand-shape pasta
• Produce creative seasonal pastas, fillings, and specialty shapes
• Prepare and manage dough for pizza, focaccia, and other breads
• Mix, ferment, portion, shape, proof, and bake bread
• Monitor ovens and cook breads consistently to the proper color, texture, and doneness
• Maintain consistent dough hydration, thickness, weight, portion size, and appearance
• Assist with developing new pasta, pizza, and bread recipes
• Properly organize, label, store, and rotate all production
• Maintain an exceptionally clean and organized workstation
• Work closely with the culinary team to continually improve recipes and techniques

Qualifications

• Minimum two years of professional pasta, pizza dough, bread-making, or closely related experience
• Strong understanding of dough development, hydration, fermentation, proofing, and flour behavior
• Experience making and cooking breads in a professional kitchen
• Experience with filled, laminated, extruded, or hand-shaped pasta strongly preferred
• Excellent attention to detail and the ability to reproduce consistent results
• Comfortable working carefully and efficiently in a high-volume kitchen
• Genuine interest in Italian culinary traditions, specialty ingredients, and creative development
• Dependable, organized, and receptive to feedback
• Fresh cheese-making experience, or an interest in learning from our team, is a plus
