Head Baker
WINNER is a Brooklyn-based hospitality group rooted in thoughtful food, strong technique, and community-driven spaces. Our growing family includes a beloved American café, a cozy wine bar, a Prospect Park kiosk, and an upcoming flagship location in Downtown Brooklyn opening Spring 2026.
We’re known for quality, consistency, and a deep respect for craft—balanced with the realities of high-volume production. As we open our newest location, we’re looking for a Head Baker to lead both our bread and pastry programs with creativity, discipline, and heart.
The OpportunityThis is a senior leadership role for a baker who wants real ownership. The Head Baker will oversee all pastry and bread operations at our Downtown Brooklyn flagship, while collaborating across the broader Winner organization.
You’ll lead production, develop menus, manage teams, and drive systems that allow great baking to happen consistently, at scale, and sustainably. This role is ideal for someone who loves being hands-on, mentoring teams, and building something lasting.
What You’ll DoLead Pastry & Bread Operations
- Oversee daily pastry and bread production across Winner locations
- Ensure consistency in quality, flavor, and presentation
- Maintain and enforce standardized recipes, formulas, and portioning
- Plan and manage production schedules for retail, wholesale, and events
- Forecast and execute accurate pastry and bread pars
- Recruit, train, and manage pastry cooks, bakers, and department leads
- Directly supervise Head Bakers and Pastry Leads
- Create schedules and assign daily tasks to ensure coverage and efficiency
- Conduct performance reviews and provide clear, actionable feedback
- Foster a respectful, collaborative, and creative kitchen culture
- Develop seasonal, rotational, and core pastry and bread offerings
- Test and implement new recipes, techniques, and products
- Balance creativity with scalability, consistency, and cost control
- Oversee ordering, receiving, and inventory for all pastry and bread ingredients
- Ensure accurate recipe costing and adherence to budget targets
- Monitor food costs, waste, and yields; implement improvements
- Partner with operations and finance to align purchasing with budgets
- Maintain full compliance with NYC DOH and company standards
- Keep workspaces clean, organized, and inspection-ready
- Conduct internal inspections and enforce safety protocols
- Lead quarterly food safety and sanitation trainings
- Work closely with culinary, FOH, and operations leadership
- Communicate regularly with senior leadership on production status and needs
- Offer insights to improve systems, efficiency, and guest experience
- 3+ years managing pastry operations in a high-volume environment
- Strong experience with bread production (or close collaboration with bread teams)
- Proven leadership and team-building skills
- Excellent organization, communication, and follow-through
- Strong understanding of NYC food safety and sanitation standards
- Experience with multi-location or wholesale production a plus
- Flexible availability, including early mornings, weekends, and holidays
- Spanish proficiency a plus
