Junior Pastry Sous
Position Summary
The Junior Sous Chef supports the Pastry leadership team in the daily operations of the pastry department, ensuring quality, consistency, and adherence to standards. This role is hands-on in production and service, while beginning to develop leadership skills through supervising, mentoring, and supporting the pastry team.
Reports To : Pastry Chef
Core Responsibilities
- Assist in supervising pastry cooks and externs in the preparation of daily mise en place and production
- Taste and evaluate mise en place to ensure consistency and adherence to quality standards
- Support the maintenance of cleanliness and organization of walk-ins and dry storage in accordance with HACCP and restaurant standards
- Assist in maintaining HACCP documentation, ensuring accuracy and daily compliance
- Work closely with the kitchen and dining room expeditor to support proper timing and flow of service
- Support recipe execution and consistency across all pastry items
Leadership & Team Development
- Support the supervision of pastry cooks and externs, providing guidance and direction during prep and service
- Assist in training and mentoring team members to build skills and consistency
- Lead by example through strong work ethic, organization, and attention to detail
- Support leadership in fostering a positive, respectful, and team-oriented work environment
- Participate in the onboarding and training of new team members as needed
Service & Guest Experience
- Ensure all pastry items meet the restaurant’s standards for quality, consistency, and presentation
- Maintain a strong presence during service to support the team and uphold execution standards
- Collaborate with culinary and dining room teams to ensure a smooth and cohesive guest experience
- Respond quickly and effectively to any issues that arise during service
Qualifications
- 2–4 years of experience in a professional kitchen
- Previous supervisory or leadership experience is a plus
- Strong foundational pastry skills and techniques
- Ability to read and execute recipes with accuracy and consistency
- Strong communication and interpersonal skills
- Basic computer proficiency, including Microsoft Office and Outlook
- Ability to stay organized and manage multiple tasks in a fast-paced environment
- Willingness to learn, take direction, and grow within a leadership role
- Ability to lift and carry up to 50 lbs and stand for extended periods
Salary : $66,500-$70,000
