Chef de Cuisine – Italian Restaurant

We are seeking an experienced and passionate Chef de Cuisine to lead the kitchen of an exciting new Italian restaurant in New York City.

The restaurant will focus on simple, ingredient-driven Italian cooking, with an emphasis on house-made fresh pasta, classic Italian dishes, seasonal ingredients, and strong execution.

The Chef de Cuisine will work closely with an experienced culinary team, including collaboration with Michelin-level culinary talent, to develop and execute the restaurant’s food program.

Responsibilities

● Lead all day-to-day BOH operations

● Maintain consistency and quality across all dishes

● Execute and help develop fresh pasta and classic Italian dishes

● Train, develop, and manage the kitchen team

● Establish and maintain kitchen systems, organization, and standards

● Manage ordering, inventory, waste, and food cost

● Maintain proper sanitation and NYC DOH standards

● Work closely with ownership and the culinary team on menu development and seasonal changes

● Build a positive, professional, and disciplined kitchen culture

● Take ownership of service and ensure the kitchen operates at a high level every day

Qualifications

● Previous Chef de Cuisine, Executive Sous Chef, or similar leadership experience

● Strong background in Italian cuisine

● Experience with fresh pasta production is highly preferred

● Strong knowledge of classic Italian cooking and ingredients

● Experience managing food and labor costs

● Excellent organizational and leadership skills

● Ability to train and develop cooks

● Comfortable working in a hands-on, high-volume kitchen

● Fine-dining or Michelin-level experience is a plus
