About Collective Retreats Governors Island
We are excited to unveil Dovetail’s latest partnership with Collective Retreats Hotels. Collective Retreats Governors Island is a seasonal hospitality property located in Governors Island, in New York City, just minutes from Manhattan.
The retreat features 29 luxury glamping accommodations, along with a large-scale events venue hosting a range of private and corporate events throughout the season. The property also includes a full food and beverage offering, with one on-site restaurant and one bar serving both overnight guests and event attendees.
Operating on a seasonal basis, the retreat requires a hands-on and adaptable approach to managing all aspects of operations, guest experience, and team performance during its active months.
Job Overview
We are searching for an experienced and passionate Food & Beverage Manager to oversee all F&B operations at Collective Retreats Governors Island. You will be responsible for the day-to-day management of Three Peaks Lodge, the Sunset Terrace bar, and all food and beverage service tied to overnight guests and on-site events.
Our ideal candidate brings a warm, guest-focused approach combined with strong operational discipline. You will lead and inspire the F&B team, uphold service and quality standards, and work closely with the General Manager and Events team to deliver an exceptional dining experience in a one-of-a-kind outdoor setting. This is a 6-month, seasonal role running alongside the retreat's operating season (May through November 2026).
Essential Functions & Responsibilities
F&B Operations:
- Oversee daily operations of Three Peaks Lodge (restaurant) and Sunset Terrace (bar), ensuring seamless service for overnight guests, day visitors, and event attendees
- Maintain and enforce brand standards, service protocols, and quality benchmarks across all F&B outlets
- Manage opening and closing procedures, daily service flow, and staffing deployment for each meal period
- Oversee menu execution in collaboration with the culinary team, ensuring consistency, quality, and alignment with the property's farm-to-island identity
- Monitor and manage food and beverage inventory, ordering, and waste reduction to meet cost targets
- Ensure compliance with all health, safety, and sanitation regulations, including applicable New York State and New York City requirements
- Maintain a thorough knowledge of all menu items, ingredients, allergens, and preparation methods to support team training and guest inquiries
Team Leadership & Development:
- Recruit, onboard, train, and supervise all F&B staff, including servers, bartenders, barbacks, and support staff
- Build and maintain weekly schedules to ensure appropriate coverage across all service periods and events
- Foster a positive, team-oriented culture that prioritizes guest satisfaction and professional development
- Conduct pre-shift meetings and ongoing coaching to maintain service standards and team morale
- Manage performance and administer progressive discipline in accordance with Dovetail policies
Events & Collaboration:
- Partner with the Director of Sales and Events Coordinator to plan and execute F&B for private and corporate events, including menu selection, staffing, and service logistic
- Ensure smooth F&B execution for full property buyouts and large-scale events accommodating up to 500 guests
- Collaborate with the General Manager and broader hotel leadership team to align F&B programming with the overall guest experience
- Participate in pre-event planning meetings and post-event debriefs to continuously improve execution
Administrative & Financial:
- Manage F&B cost controls, including food cost, beverage cost, and labor, in line with the seasonal operating budget
- Track daily revenue, covers, and key F&B metrics; report regularly to the General Manager
- Manage vendor relationships and coordinate deliveries, ensuring quality and reliability of all F&B supply partners
- Maintain accurate records for inventory, purchasing, and waste
- Assist in menu pricing and seasonal menu updates in collaboration with the culinary team and General Manager
Compensation
- The Food & Beverage Manager role offers a salary range of $65,000 - $85,000 per year (prorated for the 6-month seasonal engagement), depending on experience and qualifications. Salary will be paid in accordance with Dovetail's regular payroll schedule.
- This position includes the opportunity for performance-based bonus compensation.
- The role also includes eligibility for benefits, including paid time off and health insurance, subject to eligibility and Company policies.
Knowledge, Requirements, and Skills
- 3+ years of F&B management experience in a restaurant, hotel, resort, or comparable hospitality setting
- Proven ability to lead and develop a front-of-house team in a fast-paced, service-driven environment
- Strong knowledge of food and beverage operations, including inventory management, cost controls, and scheduling
- Experience managing F&B for events, private dining, or buyouts is strongly preferred
- Proficiency in POS systems and Microsoft Office; experience with inventory or F&B management software a plus
- Knowledge of New York State and New York City food safety, alcohol service, and labor regulations
- Excellent communication and interpersonal skills; comfortable engaging with guests, staff, and vendors alike
- Highly organized and able to manage competing priorities during peak service periods
- Ability to work flexible hours, including evenings, weekends, and holidays, as required by the seasonal schedule
- A genuine passion for hospitality, food and beverage, and creating memorable guest experiences in a unique outdoor setting
