About Us

Tempura Matsui is a Michelin-starred (One Star) tempura omakase restaurant in Murray Hill. We are hiring a dependable Line Cook for a Chef’s Assistant training track , with structured, hands-on training alongside the chef.

This position is ideal for someone who wants to grow in Japanese fine dining , has strong discipline and attention to detail, and is genuinely interested in learning tempura technique from the ground up.

You will begin with Sakizuke,Zensai (appetizer) prep/plating and sashimi support , then progress into tempura ingredient prep , station organization, and service support as you grow.

Who We’re Looking For

• Japanese kitchen experience is strongly preferred (washoku / sushi / kaiseki / tempura)
• At minimum, candidates must have a genuine interest in Japanese cuisine, omakase, and learning tempura technique
• Strong knife skills, cleanliness, organization, and attention to detail are important
• Fine-dining or upscale kitchen experience is a plus, but not required

Schedule

• Mon: Closed
• Tue–Thu: Dinner service
• Fri–Sat: Lunch + Dinner service
• Sun: Open twice per month
  Nights and weekends availability is required.

Responsibilities

• Support mise en place and service execution
• Prep and plating support for zensai and sashimi
• Assist with seafood/vegetable prep for tempura
• Maintain station organization, labeling, storage, and food safety standards
• Communicate clearly with the chef and team during service
• Open and close duties as assigned

Qualifications

• 1+ year restaurant kitchen experience preferred
• Strong fundamentals in cooking techniques and food preparation
• Clean, organized, detail-driven, and reliable under pressure
• Team-oriented with clear communication
• Must be authorized to work in the U.S.
