ESSENTIAL FUNCTIONS AND DUTIES:
- Prepares and serves meals according to food production schedules and menus using standardized recipes.
- Communicates pertinent information concerning the preparation, service, delivery and clean up of meals, snacks and nourishments to the food service director.
- Monitors use and care of supplies and equipment.
- Performs cleaning duties in kitchen and serving areas.
- Utilizes stock and supplies according to established policies and procedures.
- Checks entire department and storage areas throughout shift to ensure all duties and cleaning routines have been completed in an acceptable manner.
- Supervises dietary aides to ensure compliance with established sanitary and safety standards.
- Reviews menu breakdown for regular and modified diets with the food service staff BEFORE meal service.
- Decides in collaboration with food service director on acceptable menu substitutions and ensures that substitutions are recorded on posted meals. Identifies problems such as poor work performance of food service staff or poor acceptance of meal to the food service director.
- Check and directs storage of incoming food and supplies when necessary.
- Properly stores and plans appropriate use of left over foods according to established sanitary guidelines.
- Records food temperatures.
- Assists in planning, preparing and serving meals and snacks for special events.
- Projects a positive attitude and conveys management goals and objectives to subordinates in a supportive manner.
- Attends staff and in-service meetings as scheduled.
- May perform other duties as necessary.
