Key Manager

The Key Manager will work closely with the Frita Management Team to provide support and oversee day-to-day operations of the restaurant. Responsible for managing all hourly employees both FOH and BOH , the Key Manager will oversee all elements of food, beverage, and service. To succeed in this role, they must be able to effectively undertake the following day-to-day duties and responsibilities and lead with integrity and embody conviviality!

Day to Day:

These responsibilities highlight some of the key function of the Key Manager will perform. Additional tasks may be assigned as necessary.

• Mange menu preparation and execution to meet the expected standards
• Drive throughput and steps of service
• Properly manage the execution of recipes and menus items, ensuring they are made to spec
• Assist with managing inventory, ordering, and food quality
• Ensuring proper food temperatures when cooking and storing
• Keeping the workstation and kitchen equipment clean, organized, and sanitized
• Managing labor in accordance with business needs
• Ensure Health Department compliance as it pertains to the operation
• Ensure DOL Compliance; staff breaks, time management, etc
• Complete team member training in all stations of the restaurant; prep, hotline, expo, counter, runner, mini-bar
• Become an expert of all restaurant stations: counter, mini-bar, runner, kitchen
• Continuously provide support to all FOH & BOH staff and actively participate in the cycle of service as needed
• Ensure kitchen staff adhere to set standards, procedures, and protocols 

Requirements/Skills:

• Strong work ethic, positive attitude, and genuine passion for hospitality
• Comfortable using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation
• Ability to use electronic systems, such as computers and tablets
• 2 years + experience in a similar environment
• Excellent verbal & written communication
• Understanding of Microsoft Office applications (Excel, Word, Outlook etc.)
• Ability to coordinate multiple tasks while maintaining required standards of operation in daily restaurant activities
• Ability to stand for extended periods and lift up to 30 lbs
• NYC Food Protection Certificate holder
