Position Summary
The Prep Cook supports kitchen operations through fish preparation, ingredient production, station setup, and maintaining exceptional standards of quality, cleanliness, and organization. This role is primarily responsible for cleaning, portioning, and preparing whole fish and seafood products while ensuring readiness for service and consistency with Milos culinary standards.
Role Responsibilities
- Prepare and clean whole fish and seafood products according to chef specifications and culinary standards.
- Scale, fillet, portion, trim, and properly store seafood products.
- Prepare ingredients according to recipes and chef direction, including washing, cutting, portioning, and storage.
- Assist with daily mise en place and production to support service execution.
- Set up, stock, and maintain assigned kitchen stations.
- Follow food safety, sanitation, and hygiene standards at all times.
- Label, date, rotate, and store products according to established procedures.
- Maintain cleanliness and organization of work areas, equipment, and storage spaces.
- Safely operate kitchen equipment and properly handle knives and fish preparation tools.
- Assist with receiving, inspecting, and organizing deliveries.
- Minimize waste and handle ingredients with care and respect.
- Perform additional duties as assigned by management.
Knowledge, Experience and Skills
- Previous experience as a prep cook or in a similar role preferred.
- Experience with whole fish preparation and handling preferred.
- Knowledge of kitchen operations and food preparation techniques.
- Familiarity with food safety regulations and procedures.
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
- Strong attention to detail and organizational skills.
- Excellent knife skills for chopping, slicing, and dicing ingredients.
- Ability to work collaboratively as part of a team.
- Ability to communicate with all team members effectively.
Physical Requirements
- Ability to perform essential job functions consistently, safely, and successfully with the ADA, FMLA, and other federal, state, and local standards, including meeting qualitative and/or quantitative productivity standards.
- Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards.
- May be able to lift and carry up to 25 - 50 lbs at times.
- Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the work area and property. Bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
- Climbing steps regularly.
- Prolonged periods of standing.
Compensation
- The base pay range for this position is between $18.00 - $19.00 per hour.
- The determination of what a specific employee in this job classification is paid depends on a number of factors, including, but not limited to, prior employment experience, job-related knowledge, qualifications and skills, etc.
