Sous Chef
Sound + Fury Brewing is a brewery, bar, restaurant and event space, located in the heart of Downtown Brooklyn. We are currently looking for a Sous Chef to join our amazing kitchen team and help take us to the new heights we are aiming to achieve.
As Sous, you will work with a team that is driven by culinary excellence, and teach them new skills in our scratch-based kitchen. We are looking for a dynamic team member who loves to train, mentor, and develop the team by teaching them new skills and showing up as your best self. We want an achiever who has a strong sense for operations and is driven by results.
We are always looking to evolve our menu and testing new initiatives to improve our business operations. Sound + Fury is determined to take our menu to the next level and are looking for the right person to work with us to get there.
Duties:
- Report to the Executive chef and assist them in the aspects of running the kitchen.
- Plan regular and modified menus according to established guidelines.
- Follow standardized recipes, portioning and presentation standards. Complete and utilize daily production worksheets and waste log sheets
- Assist in training kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards
- Clearly communicate and uphold culinary standards, roll out new projects/initiatives, and keep up with all DOH guidelines. Help adhere to cleanliness and organizing standards in the kitchen
- Help maintain cleaning and maintenance schedules for equipment, storage and work areas with the team
- Assist the Executive Chef in inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- Help make decisions regarding utilization of leftover food products staying within Company guidelines for such products
- Comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
- Follow facility, department, and company safety policies and procedures to include occurrence reporting
- Participate and attend departmental meetings, staff development, and professional programs, as appropriate
- Complete reporting and documentation functions in order to provide consistent information and feedback to our leadership team
- Help conduct Pre-shifts & Chef’s tables with the restaurant team to keep them informed on updates and new restaurant goals.

Requirements:
- 3 - 5 years minimum kitchen experience.
- Culinary degree preferred
- High volume production and cooking experience is essential
- Excellent communication skills and an organized approach to achieving team goals
- A passion for real, good food and the leadership skills to help operate a scratched base, ever changing kitchen
- An eye for detail
- Your Department of Health and/or ServSafe certification
- Desire to learn and grow with a high quality kitchen and company
Job Type: Full-time
Salary: $66,700.00 - $70,000.00 per year
