Job Overview:
We are seeking an experienced and passionate Omakase Chef to join our culinary team at an exclusive private members club located in the heart of Manhattan. As an Omakase Chef, you will be responsible for curating and preparing an exceptional, seasonally inspired omakase experience for our members, ensuring an unforgettable dining experience with attention to detail, quality, and artistry. The ideal candidate will possess deep knowledge of Japanese culinary techniques, a flair for presentation, and the ability to personalize each dining experience to our members' tastes and preferences.
Key Responsibilities:
- Omakase Experience Creation : Prepare a bespoke omakase menu, showcasing the finest seasonal ingredients with a focus on sushi, sashimi, and other traditional Japanese dishes. Ensure a unique and elevated experience for every guest, with dishes that reflect the highest standards of quality, freshness, and craftsmanship.
- Ingredient Sourcing and Procurement : Collaborate with the Executive Chef to source premium ingredients from trusted purveyors, ensuring the highest quality and sustainability standards. Maintain relationships with suppliers to obtain rare or specialty items when needed.
- Menu Development : Work closely with the culinary team to develop creative menus that reflect seasonal trends, member preferences, and the evolving nature of the omakase dining experience.
- Quality Control : Ensure consistent food quality, presentation, and portion control. Maintain high standards of cleanliness, food safety, and kitchen organization at all times.
- Member Engagement : Build relationships with members by providing personalized experiences, understanding their dietary preferences, and adjusting the omakase offerings to suit their tastes. Be prepared to interact with guests at the bar or seating area as needed.
- Team Collaboration : Collaborate with kitchen staff, front-of-house team, and other culinary leaders to ensure smooth service and a seamless dining experience. Train and mentor junior staff in proper techniques and presentation.
- Inventory and Cost Management : Assist in inventory management, tracking food costs, and ensuring minimal waste. Work with the kitchen team to maintain efficient use of ingredients.
Requirements:
- Experience : Minimum of 4 years of experience as an Omakase Chef or Sushi Chef in a high-end, fine-dining environment. Experience in a private or exclusive club setting is a plus.
- Expertise : Strong knowledge of traditional Japanese culinary techniques, particularly sushi and sashimi preparation. Familiarity with both classic and contemporary approaches to omakase-style dining.
- Creativity : A passion for crafting unique and innovative dishes. Ability to adapt and customize menus to suit the individual preferences and dietary needs of members.
- Presentation Skills : Exceptional attention to detail and artistry in dish presentation, with a keen sense of aesthetics and balance.
- Communication Skills : Strong interpersonal skills and the ability to engage with high-profile members in a professional, polished manner. Ability to work in a fast-paced, dynamic environment while maintaining composure and professionalism.
- Culinary Education : Formal culinary education is preferred but not required if the candidate has significant experience in traditional Japanese cuisine.
- Food Safety and Sanitation : In-depth knowledge of food safety regulations, cleanliness, and best practices in a high-end kitchen environment.
- Physical Demands : Ability to stand for long periods, work in a fast-paced environment, and lift up to 50 lbs.
