In this role, you will be the heartbeat of our evening operations—overseeing high-volume, premium dinner services, executing late-night luxury lounge menus, and ensuring our exacting standards are met on every single plate.

• Develop Talent: Lead, coach, and inspire a diverse team of PM line cooks and prep cooks, helping them sharpen their skills and grow within the MML family.

• Control the Nightly Close: Oversee a meticulous, organized nightly breakdown. Manage inventory rotation (FIFO) and strict sanitation protocols so the morning crew is set up for total success.

• The Background: 2+ years of leadership experience (Sous Chef or strong Junior Sous) in a high-volume fine-dining restaurant, premium multi-unit group, or Michelin-starred environment.

• The Mindset: A refined palate, a sharp eye for detail, and a cool-headed approach to leadership when the kitchen gets busy.
