Fresh Pasta Production Manager

La Trafila is a New York–based artisan pasta manufacturer supplying fresh pasta to restaurants, chefs, specialty food stores, and hospitality businesses. Our pasta is Made in New York, Mastered in Italy, combining traditional Italian pasta-making techniques with modern production.

As our company continues to grow, we are seeking an experienced Fresh Pasta Production Manager to oversee daily production operations, maintain high quality standards, and ensure compliance with food safety regulations.

Responsibilities

Production Management

- Oversee daily fresh pasta production operations

- Coordinate and supervise production staff

- Ensure production schedules are completed efficiently and on time

- Maintain consistency and quality of all pasta products

Food Safety & Compliance

- Manage and enforce HACCP plans and food safety protocols

- Ensure compliance with FDA, USDA and local health department regulations

- Maintain sanitation and cleaning procedures

- Monitor temperature controls, storage practices, and production processes

Equipment & Maintenance

- Oversee the proper operation of pasta production machines and packaging equipment

- Perform basic mechanical troubleshooting and repairs

- Coordinate maintenance schedules for production equipment

- Work with external technicians when advanced repairs are required

Operations & Inventory

- Monitor raw material usage and inventory levels

- Coordinate with purchasing to ensure ingredient availability

- Improve production workflows and efficiency

- Train staff on equipment operation and safety procedures

Qualifications

- Minimum 5 years of experience in food production or pasta manufacturing

- Strong knowledge of HACCP systems and food safety regulations

- Experience managing food production teams

- Experience working with pasta machines and food processing equipment

- Ability to troubleshoot and perform basic repairs on production machinery

- Strong organizational and leadership skills

- Ability to work in a fast-paced production environment

Languages Required

- Fluent in English and Spanish
