Director of Service

We're hiring for a role that's bigger than an Assistant General Manager. We need someone who can own the guest experience from open to close, run the floor like it's theirs, and turn great service into measurable revenue — freeing up our GM and ownership to focus on the rest of the business.

About Colonia Verde

Colonia Verde is a 75-seat restaurant in Fort Greene, Brooklyn, built on hospitality that feels personal even at full capacity on a Friday night. We're growing, and we're looking for a service leader who treats every shift as a chance to raise the bar — for guests and for the team.

About the Role

A year in, you'll have built a Front of House team that runs the steps of service consistently without you standing over every table. You'll have trained the floor to sell with confidence — especially on wine — and check averages will show it. The GM will be spending less time firefighting service issues and more time on the business, and ownership will trust you to run service leadership end to end.

What You'll Do

• Own execution of our steps of service across every shift — setting and enforcing the standard for guest greeting, pacing, table management, and recovery
• Lead pre-shift meetings and ongoing Front of House training, including wine and beverage education that translates into stronger recommendations and higher check averages
• Build and manage the Front of House schedule in partnership with the General Manager
• Develop and maintain guest relationships — VIPs, regulars, and reservations — so every guest feels recognized and looked after
• Run regular service meetings that keep the floor team aligned on standards, feedback, and goals
• Partner with the GM and ownership on initiatives that grow per-cover revenue without compromising the guest experience
• Work the floor during service — leading by example and troubleshooting in real time, not just from the office
• Be Resy Savy. Manage our online booking system with precision and strategically in order to maximize capacity.
• Review and answer all online reviews promptly. Alert GM/ownership of any relevant reviews that need attention.
• Help with social media presence.
• Weekly assist to GM with payroll consolidation (tip out sheets, clock-in/clock-out review)

What We're Looking For

Required

• 3+ years of Front of House leadership experience in a full-service restaurant
• Strong wine knowledge and a love for natural wine
• A track record of building and enforcing service standards in a high-volume setting
• Experience managing Front of House scheduling and staffing
• Comfortable balancing floor leadership with the administrative side of the job — scheduling, service meetings, and pre-shifts

Preferred

• Sommelier certification or formal wine education
• Experience in a similarly sized, independently owned restaurant
• A track record of directly contributing to revenue growth — check average, guest retention, repeat visits

Compensation

$75,000–$85,000 base salary, depending on experience.
