We are currently opening Winner at Alloy, our new flagship location in Downtown Brooklyn - a high-volume, all-day restaurant and café designed to showcase the next evolution of the Winner brand.
We’re looking for a talented, organized, and highly motivated Chef de Cuisine to lead the kitchen and help shape the future of this exciting opening.
About the RoleThe Chef de Cuisine is the senior culinary leader at Winner at Alloy and will oversee all aspects of kitchen operations, including production, service execution, hiring, training, scheduling, food quality, inventory, labor management, and cost controls.
This is a hands-on leadership role for someone who thrives in fast-paced kitchens, enjoys building strong teams, and takes pride in running a clean, organized, financially responsible operation.
The CDC will work closely with the Culinary Director and broader culinary leadership team to execute menus, develop systems, and deliver an exceptional guest experience every day.
ResponsibilitiesCulinary Leadership & Execution
- Lead all kitchen operations including prep, production, and service
- Ensure all dishes meet Winner standards for quality, consistency, and presentation
- Conduct daily tastings, line checks, and quality control
- Uphold recipe adherence, portioning, and plating standards
- Lead service with calm, clear communication and strong line presence
- Hire, onboard, train, and develop kitchen team members
- Build schedules aligned with business levels and labor goals
- Provide coaching, accountability, and ongoing development
- Foster a respectful, professional, and positive kitchen culture
- Create strong communication and teamwork across all BOH positions
- Own kitchen organization, systems, and daily workflow
- Manage inventory, ordering, vendor relationships, and monthly counts
- Maintain pars and oversee production planning
- Control food cost through waste reduction, portion control, and operational discipline
- Monitor labor, overtime, and staffing efficiency
- Collaborate with the Culinary Director on seasonal menu development
- Assist with new dishes, specials, and product innovation
- Execute menu rollouts and train teams on new items
- Contribute ideas that support the continued growth of the Winner brand
- Maintain a clean, organized, inspection-ready kitchen at all times
- Ensure full compliance with NYC Department of Health standards
- Oversee sanitation systems, allergen protocols, and equipment maintenance
- Uphold the highest standards of food safety and professionalism
- 4–6+ years of experience in a senior kitchen leadership role (Chef de Cuisine, Executive Sous Chef, Kitchen Manager, or similar)
- Experience leading high-volume, fast-paced kitchens
- Strong operational and financial management skills
- Proven success managing labor, inventory, and food cost
- Strong leadership, communication, and organizational abilities
- Passion for mentorship, systems, and culinary excellence
- Deep understanding of food safety and kitchen operations
- Spanish-speaking ability is a strong plus
