Fine Dining Captain

Amphora, an ambitious new fine dining restaurant opening in Manhattan's Flatiron District, is seeking experienced Captains to join our opening team.

This is an opportunity to help build a restaurant from the ground up and play an important role in establishing Amphora's service culture, standards, and identity from day one.

We are assembling a team of hospitality professionals who share a commitment to exceptional food and wine, genuine hospitality, and thoughtful, highly personalized service.

THE ROLE

At Amphora, the Captain is the leader of the guest experience at the table.

Our Captains are responsible for guiding guests through their experience with confidence, warmth, and attention to detail while leading their station and working closely with the culinary, beverage, and service teams.

The role requires strong technical foundations, but we believe exceptional hospitality goes beyond executing the steps of service. It is about reading the table, anticipating needs, understanding when to engage and when to give guests space, and creating experiences that feel natural, personal, and memorable.

Captains will take ownership of the pacing and flow of the meal, coordinate their service team, communicate closely with the kitchen and beverage team, and ensure that every detail of the guest experience reflects Amphora's standards.

A PASSION FOR WINE

Wine will be an important part of the experience at Amphora, and a genuine interest in wine is essential for this role.

We are looking for Captains who enjoy talking about wine, discovering what guests like, and making thoughtful recommendations that complement both the food and the occasion.

Formal wine certifications are welcomed but not required. Curiosity, strong foundational knowledge, confidence with guests, and a genuine desire to continue learning are equally important.

WHAT WE'RE LOOKING FOR

• Previous Captain or senior front-of-house experience in a Michelin-recognized or comparable fine dining restaurant
• Strong knowledge of food, wine, spirits, and fine dining service
• Ability to confidently lead a station and coordinate with Back Waiters, Runners, Sommeliers, and the broader service team
• Excellent understanding of sequence of service, pacing, table maintenance, and dining room communication
• Confidence discussing wine and making thoughtful recommendations
• Ability to communicate clearly about ingredients, preparation, pairings, and dietary considerations
• Warm, polished, and professional tableside presence
• Strong organizational and communication skills
• Ability to anticipate guest needs and personalize the dining experience
• Comfort handling special occasions, VIP guests, and guest recovery with discretion and professionalism
• Collaborative, humble, and team-oriented approach
• Intellectual curiosity and a commitment to continued professional development
• Availability to participate in extensive pre-opening training
