Shiraz Kitchen is an established restaurant in downtown White Plains known for its warm hospitality, vibrant cuisine, and award-winning wine program. After a successful two-year run with our sushi program, we are reintroducing our sushi bar and seeking a talented Omakase Sushi Chef to lead this next chapter.
This position offers the opportunity to take ownership of the sushi experience within a respected restaurant, working closely with guests while maintaining the highest standards of craftsmanship, quality, and hospitality.
We are looking for a chef who respects traditional Japanese techniques, understands the importance of seasonality and sourcing, and enjoys creating a memorable dining experience at the counter.
What You Will Do
• Lead and execute a refined sushi and omakase program
• Prepare sushi with precise Japanese knife techniques and traditional methods
• Select and handle seafood with a deep understanding of quality and seasonality
• Create a thoughtful omakase progression for guests seated at the sushi counter
• Maintain exceptional standards of cleanliness, organization, and food safety
• Ensure consistency and elegance in every dish served
• Engage with guests to create an intimate and memorable dining experience
• Collaborate with ownership and the kitchen team on menu development and seasonal offerings
What We Are Looking For
• 10+ years experience as a sushi chef
• 3+ years experience working as an Omakase chef preferred
• Strong knowledge of seafood sourcing and seasonality
• Exceptional knife skills and sushi preparation techniques
• Ability to perform under pressure in a fast-paced service environment
• Professional communication and guest interaction skills
• Experience in fine dining or high-quality sushi restaurants preferred
Schedule
Full-time position
Evenings, weekends, and holidays required
Compensation
Starting salary $78,000 per year
Additional earnings may be available based on experience and performance.
