Marcel is located in the iconic Breuer building on Madison Avenue, a Roman and Williams–designed space created in partnership with Sotheby’s where cuisine, art, and design converge. Led by Chef-Partner Marie-Aude Rose and Executive Chef Juan Moncalvo, the restaurant serves refined continental cuisine rooted in French tradition and inspired by Chef Rose’s homage to the Paris she knows and loves. The menu blends classical technique with modern New York sensibilities, focusing on seasonality and highlighting carefully sourced local ingredients with minimal, thoughtful enhancement.


We are developing skilled culinary craftsmen and women who want to grow in their careers and strive for excellence. Often described as the “big brother” to downtown favorite La Mercerie, Marcel also features a celebrated pâtisserie program with handcrafted viennoiserie, madeleines, tarts, and entremets. The experience unfolds in a striking, design-forward space with an open kitchen, sculptural dining room, garden terrace, museum-quality art, and a wine program drawn from Sotheby’s cellar, all supporting Marcel’s mission to be a culinary destination of excellence in New York City.

ESSENTIAL RESPONSIBILITIES:
• Enforce compliance with established kitchen standards, procedures, departmental policies, and sanitation guidelines.
• Maintain in-depth knowledge of recipes, ingredients, allergens, and proper food presentation.
• Verify that all products and prepared items are correctly labeled, dated, initialed, covered, and rotated in accordance with FIFO (first in, first out) guidelines.

KNOWLEDGE, EXPERIENCE, AND SKILLS:
• Possess extensive knowledge of diverse culinary styles and demonstrate mastery across all line-level cooking stations.
• Experience working in an upscale, high-volume fine dining environment.
• Strong communication and interpersonal skills that support a collaborative, team-oriented environment.

Additional Responsibilities:

  • Display a working knowledge of all ingredients and preparations used on the menu
  • Consistently ensure that station mise en place is prepped, seasoned, and stocked throughout service, and overall station remains clean and organized
  • Effectively participate in a professionally run service period, ensuring excellence in cooking, timing, plate assembly, and communication
  • Learn the craft of French Cuisine through a modern lens
  • Promote teamwork and excellence amongst the kitchen team
  • Demonstrate an eagerness to refine techniques and a desire to continually learn and grow.

Job Summary

Summary: Prepares food in accordance with applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures. Ensures quality food service is provided at all times.

Essential Duties and Responsibilities:
  • Prepares high-quality food items according to standardized recipes and instructions to meet production, delivery and service schedules.
  • Serves meals or prepares for delivery by using correct portioning, meeting outlined standards, ensuring that food is at the correct temperature and is attractive and tasty. Tastes all prepared food items.
  • Uses established ticket collection procedures during service. Responsible for records from area worked during service periods.
  • Cleans kitchen after preparation and serving, maintaining high standards of cleanliness. Stores or discards excess food in accordance with safe food-handling procedures.
  • Keeps refrigerators and storerooms clean and neat. Ensures food and supply items are stored per standards.
  • Operates and maintains kitchen equipment as instructed.
  • Assists in production planning, record keeping and reporting as required.
  • Assists in the ordering and receiving of all food and supplies as required.
  • Reports needed maintenance, faulty equipment or accidents to the supervisor immediately.
  • Attends in-service and safety meetings.
  • Maintains good working relationships with coworkers, customers, administrators and managers.
  • Performs job safely while maintaining a clean, safe work environment.
  • Performs other duties as assigned.
  • Ensures proper presentation, portion control and maintenance of serving temperatures; follows HACCP standards.
  • Personal commitment to your own safety and that of others.
  • Abides by all Company policies and procedures including but not limited to:
    • The use of a medium weight cut gloves when handling or using knives, peelers, choppers, mandolins or cleaning a slicer.
    • The use of oven mitts, fryer gloves or steamer gloves when handling hot pans from ovens, warmers or steamtables.
    • The use of slip-resistant shoes and proper lifting techniques.
