Consulting Chef
I am introducing what I think is an exciting new culinary concept but I am not part of the food world. I want to be sure that I have amazing dishes before I start selling them so I want to know what chefs/cooks/food entrepreneurs do to get feedback on their new dish or product so they can revise it and get more feedback and keep going with this process until the feedback they get tells them they have something foodies will love. Do they just go off of their own palate? Do they put it in front of friends and family? Are there other good approaches? People rave about the cinnamon rolls at Sunday Morning and the croissants at L'Apartment 4F and there are other great examples of products foodies love. What do chefs and food entrepreneurs do and what can I do so to create a situation where I can iterate my dishes until I arrive at products foodies will love? I'd like to have an hour long chat with several people (one at a time) to collect ideas and I am looking for people who have great knowledge and experience on this topic.
