Kitchen team member at Lala's

Lala’s Brooklyn Apizza is located on the upper level at Grimm Artisanal Ales in Williamsburg and is led by Chef Esther Stilwell. Opened in Summer 2023, the restaurant features our own eccentric take on the uniquely charred New Haven apizza style, with an ethereally thin crust made from our house-milled malted wheat, fermented with our own house sourdough culture, and baked in an Italian wood-fired oven. With a seasonally changing and locally sourced menu, Lala's has been featured in publications like Eater, The New York Times, Time Out, and more. Our kitchen team is completely cross-trained and works collaboratively. We are passionate about food, experimentation, and the intersection between beer, fermentation, and food. We are a tight-knit community and are looking for a like minded individuals to join our family!

• Comfortability working with wood fired oven and sourdough
• Energetic and respectful team player with clear communication skills
• Enthusiasm and passion for wholesome, seasonal, and fermented food
• Ability to multitask in fast-paced kitchen environment
• A flexible attitude to adapt to evolving structures and procedures
• Highly organized, punctual, and with a eye for detail
• Ability and knowledge of novel and seasonal ingredients
• Excellent knife skills

Qualifications:

• 1+ years of kitchen experience with knowledge of sourdough, wood fired cooking, and pizza preferred.
• Ability to perform physical requirements of the role including standing/walking for entirety of shift, bending, pulling, pushing, using stairs, lifting and carrying up to 55 pounds
• Ability to work a flexible schedule including days, nights, weekends, and holidays

Responsibilities:

• Ability to perform all stations, including setup and breakdown, including: oven, rolling, topping, cold bar, prep, food running, expediting, and dish.
• Handling of sourdough
• Using a wood fired oven
• Maintaining a clean workstation, organization of storage and fridge spaces, and adhering to food safety regulations.
• Following SOPs, recipes, and kitchen protocols.
• Assisting in special event catering and other special projects
• Communicate and collaborate with coworkers and customers respectfully and clearly
