Location: New York, NY West Village neighborhood
Position: Full-Time
Compensation: $80k to $95K
We are seeking an experienced Sushi / Omakase Chef to join our New York City team. This role is ideal for a chef with strong traditional technique, exceptional knife skills, and a polished counter presence. The position focuses on delivering a refined omakase experience with an emphasis on quality, consistency, and guest engagement. Experience in opening a restaurant is also ideal.
Responsibilities- Execute nightly omakase service and à la carte sushi with precision and consistency
- Perform full fish breakdown, curing, aging, and preparation
- Prepare and season sushi rice to exacting standards
- Maintain strict cleanliness, organization, and NYC Department of Health compliance
- Provide professional, knowledgeable guest interaction at the counter
- Assist with daily fish selection, sourcing, and seasonal menu development
- 3–5+ years professional sushi experience (NYC or high-end omakase preferred)
- Advanced knife skills and fish butchery expertise
- Strong knowledge of raw fish handling and food safety standards
- Ability to work cleanly and efficiently under high-volume service
- Availability for evenings, weekends, and holidays
- Must have a NYC Food Handlers Certificate issued within the past three years.
- Experience in NYC fine-dining or omakase counters
- Japanese culinary training or apprenticeship
- Leadership or mentoring experience
